Vieques Island is part of the "Spanish Virgin Islands", owned by Puerto Rico, located about 12 miles off it's Southeast coast.
The 'Inn On The Blue Horizon' and it's 30 sprawling acres is located on the south side of Vieques Island on 20 ft bluffs overlooking the beautiful green Caribbean Sea towards South America. Amazing views
'CHEF MICHAEL'S' is the Inn's 60 seat open-air, fine dining restaurant. Seasoned Caribbean travelers tell us it's the best food of any of the islands! Our Manhattan clientle exclaims us "better than New York!"
'THE HOR D'OEUVRE BAR' is our 60 seat casual, circular, open-air bar serving great spirits, interesting conversation and creative casual cuisine.
Our clientle is very worldly, upscale, and cultured. Our average quest check per person is about $75

This week's Menu includes:- Sesame-crusted, Rare seared Tuna Steak on a Stirfry of Vegetables, Soba Noodles and Thai Curry
- Georgia Quail wrapped with Roasted Jalapenos in Veal Bacon, grilled, and served with a Bourbon Pecan Sauce and Risole Potatoes
- Bloody Mary Steak with Sundried Tomato Horseradish Butter and Potato Leek Threads
- Pan-seared Foie Gras crowning Herb Flapjacks with a Port Maple Butter
- Oven-roasted Sea Bass with a risole of Butternut and Portabella tossed with fresh spinach

We are 100% self producing: all stocks, soups, desserts, breads, etc. made on premise! A great place to come and learn, excellent for recent culinary graduates or new-comers to the industry.
We will assist in arranging housing and transportation!
