We propose to open three dining facilities at Liberty Forge, all of which will be managed and directed by the Executive Chef, with assistant chefs. The first will be The Wedge with dining facilities of two adjoining dining rooms plus lounge, seating about 180. A temporary tent overlooking three lakes and extensive gardens will be erected to accommodate more than 250 for spring, summer and fall events. The final dining venue will be Forge Country Fair Restaurant located at the Family Entertainment Complex with informal casual dining with both table service as well as self-service overlooking the Yellow Breeches from the large deck, including ice cream parlor, gourmet coffee shop, and take-out food.
All structures will be Northwestern heavy timber frame buildings.
The applicant must present credentials and ability suitable for such operations in both formal and casual food preparation. The person will eventually direct all food venues and presentations. Cuisine experience should include appropriate education and work experience with French, Italian, and Northwestern cuisine. The owner will provide full accounting support and market synergy to integrate the broad scope of activities and events at Liberty Forge. While limited fine dining will be provided, marketing efforts and programs will be for larger groups of golfers, senior citizens to the arboretum, wedding events, corporate events and the like. The applicant should be innovative and creative in not only food preparation and presentation, but in working with a creative management team to realize the synergies involved in the overall project. Upon proven ability and performance, the person will become part of the management team and share in both profit and equity, under a unique participation compensation plan. The applicant should respond as provided below and furnish academic credentials, prior restaurant experience, food specialties, present and prior business experience in management positions as well as personal-goal objectives, and compensation requirements, and ability to work in the United States, if not a United States citizen.
